A vegetable delicacy, the fiddlehead is celebrated with a 24 ft. tall wood sculpture. The Fiddlehead Festival rocks the park every July 1st - Canada Day.

Fiddlehead (ferns) are a springtime delicacy that taste something like asparagus. The young ferns grow by the river, and are only eaten in the springtime when they first appear and look a little like the top of a fiddle.
While you can't get them out of season, fresh or at a local eatery, we did run into a guy at the park (by the sign) who was going to try and get us some if we met him back at the park at 5:00 pm. That wasn't going to happen, so will just have to come up north and get some for ourselves in the spring. Fiddleheads also grow in Northern Maine. But, we did enjoy the park. You can camp there, and I bought a T-shirt at the "Welcome Center."
The wood carvings (1995) of the Fiddleheads are at the Plaster Rock Tourist Park near the Tobique River. They stand 24 feet (7.3 metres) high! On Canada Day (July 1st) there is a Fiddlehead Festival at the park and fiddleheads are served.
